Easy Basque Burnt Cheesecake

Ingredients
- 500g cream cheese
- 180g sugar
- 3 large eggs
- 300ml double cream
- 2 tbsp cornstarch
- 1 tsp vanilla

Mix everything until completely smooth.

Pour into a cake pan lined with parchment paper, letting the paper come up the sides.

Bake at 425°F (220°C, top and bottom heat) for 40–50 minutes, until the top is deeply golden — almost burnt — and the center still wobbles.

Cool, then chill for at least 6 hours before serving.
Tips
- Don't fear the dark top — that caramelization is the flavor.
- The 6-hour chill is what sets the creamy center; overnight is even better.
