Ingredients
Chicken
- 2 chicken breasts, diced
- Paprika, salt & garlic powder, to season
- 4 tbsp flour
- 1 tbsp cornstarch
- 2 beaten eggs
Sauce
- ½ cup light soy sauce
- 100 ml ketchup
- 2 tbsp sweet chili sauce
- 1 tbsp honey (or brown sugar)
- 1 tbsp minced garlic
- 1 tbsp cornstarch mixed with pineapple juice
To serve
- 1 onion, diced
- 1 bell pepper, diced
- Steamed white rice or noodles
Method
- 1
Season the diced chicken with paprika, salt and garlic powder. Mix the flour with the cornstarch.
- 2
Coat each piece: flour → egg → flour → egg → flour for the crispiest coating.
- 3
Fry until deep golden and cooked through.
- 4
Sauté the diced onion and bell pepper, then pour in all the sauce ingredients.
- 5
Simmer until slightly thickened, adding a splash of water if needed.
- 6
Toss in the crispy chicken for 2 minutes only — just enough to coat while keeping it crunchy. Serve with rice or noodles.
Tips
- The double flour-egg-flour dredge is the secret to a coating that stays crispy under the sauce.
